SPICY MEATLOAF!!!!
Yes, I know you're jealous. It was pretty good, considering it was a Weight Watchers recipe. I figured I'd tell Jonathan this bit of information AFTER he had already taken his first bite and declared that it was delicious. I'm not sure if he was just being nice or if he was actually telling the truth, but my little plan worked! If you feel that you and yours would enjoy spicy meatloaf as much as we did, here is the recipe:
You will need:
2 teaspoons canola oil
1 c. finely chopped mushrooms
1 onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
1 pound lean ground beef (5% or less fat)
1/2 c. quick-cooking oats
1 large egg
2 tablespoon Worcestershire sauce
3-4 garlic cloves, minced
1 teaspoon finely chopped fresh rosemary, or 1/2 teaspoon dried
1 teaspoon finely chopped fresh sage, or pinch dried
1 teaspoon finely chopped fresh thyme, or 1/2 teaspoon dried
1/4 teaspoons hot red pepper sauce
1/4 c. tomato puree or tomato sauce
When a recipe has more than two ingredients, I like to go ahead and measure everything out. (See Cooking for Dummies: Vol. I)
While you're getting all your ingredients together, go ahead and preheat the oven to 350 degrees.
Spray a 9-inch square baking pan with nonstick spray.
In a large nonstick skillet, heat the oil. Saute the mushrooms, onion, carrot, and celery until softened, about 5 minutes.
******Be very careful that you do not leave these finely chopped veggies unattended as they will easily burn, leaving you huddled over your bowl picking out burnt flakes and burnt veggie remains******
In a large bowl, combine the sauteed vegetables, beef, oats, egg, tomato paste, Worcestershire sauce, garlic, rosemary, sage, thyme, and pepper sauce. Shape into a loaf and place into pan. Bake 30 minutes.
Top with the tomato puree and bake 30-45 minutes longer. Cut into 8 slices.
